  • 1 package Knorr® Mi Arroz™ White Rice Seasoning
  • 3 cups water
  • 1 1/2 cups long grain rice
  • 2 Tbsp. vegetable oil
  • 1 small roasted poblano pepper, chopped * (about 1/4 cup)
  • 1/2 cup cooked corn
  • low-fat sour cream

  1. Prepare rice according to Knorr® Mi Arroz™ White Rice Seasoning Mix package directions.

  2. Remove from heat and stir in poblano pepper and corn. Let stand covered 10 minutes. If desired, serve rice garnished with lowfat sour cream. It's delicious!!

Hints & Tips

*Tip to roast pepper: Place in broiler pan lined with aluminum foil and broil, until blackened on all sides, turning occasionally, about 8 minutes. Place hot pepper in small bowl and cover tightly with aluminum foil. Once pepper is cool, gently peel skin, remove seeds and chop.
