  • cooking oil
  • 1 pc medium white onion, minced
  • 4 pcs garlic cloves, minced
  • 1 tbsp tomato paste
  • 1/4 tsp chilli flakes
  • 2 cups jasmine rice, rinsed
  • 3 cups water
  • 1 pc Knorr chicken cube
  • 1 tbsp Knorr Liquid Seasoning
  • 1 cup mixed vegetables (store-bought or prepared at home by combining corn kernels, carrot cubes, and green peas)
  • salt and pepper to taste
  • Optional garnish: chopped cilantro or green onions

Chicken Marinade:

  • 6 pcs chicken thighs and legs, skin-on
  • 2 tbsp Knorr Liquid Seasoning
  • 2 tbsp ketchup
  • 1 tsp paprika
  • 1/4 tsp chilli powder
  • 2 pcs garlic cloves, minced
  • 1 tsp salt
  • 2 tsp brown sugar
  • pepper to taste

One-Pot and Only Spicy Chicken Rice
  1. Prepare the Chicken and Vegetables: In a bowl, combine chicken thighs and legs with Knorr Liquid Seasoning, ketchup, paprika, chili powder, minced garlic, salt, brown sugar, and pepper. Massage the marinade into the chicken and set aside while prepping the vegetables.

  2. Cook the Chicken: Heat cooking oil in a large pot over medium heat. Add the marinated chicken thighs and legs and sear until lightly browned on all sides. Remove and set aside. In the same pot, sauté onion, garlic, and minced red chilies until fragrant. Add tomato paste and toast for 2-3 minutes until it darkens slightly and develops a richer flavor.

  3. Cook the Rice and Assemble: Add rice, ketchup, water, and Knorr Chicken Cube to the pot. Stir well and bring to a boil. Return the chicken to the pot and cook the rice and chicken until the water is almost dried out. Add the mixed vegetables and simmer until the rice is fully cooked and the vegetables are tender, which is around 10 minutes. Turn off the heat, fluff the rice with a fork, and garnish with chopped cilantro or green onions if desired before serving.
