  • For Palapa:
  • 1 cup shallots
  • 1 large ginger, peeled and minced
  • 20 pcs. red chili pepper, minced
  • (mix and pound all ingredients together in a mortar and pestle)
  • For Chicken Piaparan:
  • 1 whole chicken, quartered
  • 1/2 grated coconut meat (niyog)
  • 2 tbsp palapa
  • 1 tbsp. turmeric powder
  • 1 white onion, peeled and minced
  • 2 cloves garlic, peeled and minced
  • 2 bay leaves
  • 2 stalks onion leeks
  • 1 cup coconut milk
  • 1/2 cup Knorr Chicken broth (dilute ½ piece of Knorr Chicken Cube in ½ cup hot water)
  • Knorr Liquid Seasoning
  • salt to taste

Chicken Piaparan Recipe
  1. Let's first prepare the Palapa by mixing the all ingredients together and pounding them in a mortar and pestle until well incorporated and you can smell the spices aroma. Set aside.

  2. Now let's move to the chicken preparation. Fire up your stove to high and heat up your pan. Drop in the garlic and onions and sauté. When the garlic turns light brown in color and onions are translucent, it’s time to throw in the ginger and cook until you can smell the lovely aroma from the vegetables.

  3. Gently place the chicken in the pan and cook it until it is evenly brown. Pour in the coconut milk, Knorr Chicken broth, bay leaves and turmeric powder and cook slowly in low heat until chicken is cooked through and tender.

  4. In a separate pan, throw in the garlic, onion, onion leeks and palapa. Stir well and cook this for a few minutes to release the oils before adding to the coconut turmeric mixture.

  5. For that umami goodness, this recipe isn’t complete without adding Knorr Liquid Seasoning. Check the taste so that you’ll know if additional salt and pepper will be needed to make the flavour suit your preferences.

  6. Transfer to a serving plate and wait for your family’s reaction once they taste this delicious dish inspired by Maranao.
