Bacon, Spinach And Egg Pie

  • Oil
  • Bacon, chopped
  • 1 onion, chopped
  • Baby spinach
  • Ready rolled puff pastry
  • Ground paprika
  • Flour
  • Coarse ground black pepper
  • KNORR chicken cubes
  • Cream or milk
  • 6 Eggs

Bacon, spinach  and egg pie
  1. Preheat the oven to 200 degrees Celsius.

  2. Fry the onion and bacon in the oil until lightly browned.

  3. Add the spinach and fry. Allow to cool.

  4. Line a 2lt pie dish with half of the puff pastry, cover the base with greaseproof and fill with beans, corn or rice.

  5. Bake blind for 10 minutes, the remove the paper and beans and bake for another 10 minutes.

  6. Allow to cool, the spread the bacon spinach mix over the pastry.

  7. In a bowl, mix the flour, cream eggs, seasonings and crumbled cubes.

  8. Pour the mix over the bacon spinach mix.

  9. Top the pie with the remaining half of the pastry, decorate and brush with milk.

  10. Bake for 20 – 25 minutes or until the pastry is golden brown.

  11. Serve with salad.
