  • 1/3 cup (75 mL) olive oil
  • 1/4 cup (60 mL) balsamic vinegar
  • 1 tsp. (5 mL) Maille® Old Style Mustard
  • 1 clove garlic, finely chopped
  • 2 cups (500 mL) water
  • 1/2 cube Knorr® Vegetable Bouillon Cube
  • 1 cup (250 mL) uncooked farro
  • 1 package (142 g) baby spinach leaves, coarsely chopped
  • 2 medium orange tomatoes, cut into large dice
  • 1/3 cup (75 mL) chopped toasted walnuts
  • 1/3 cup (75 mL) crumbled feta cheese

Farro Spinach Salad
  1. To make Dressing, whisk together oil, vinegar, Mustard and garlic in large serving bowl. Season if desired, with salt and pepper to taste; set aside.

  2. For Salad, bring water and 1/2 Knorr® Vegetable Bouillon Cube to a boil in large saucepan and cook farro according to package directions. Remove from heat and let cool.

  3. Add cooled farro, spinach, tomatoes and half of the walnuts and feta to bowl with Dressing; toss to mix. Sprinkle with remaining walnuts and feta.
